Ingredients
  

  • 16 bean mix
  • 4-6 cups vegetable broth or water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 celery stalks, chopped
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional: diced vegetables, herbs, and protein (ham, sausage, tofu)

Instructions
 

  • Soak the 16 bean mix overnight or use a quick soak method.
  • In a large pot, sauté onions, garlic, and celery until fragrant.
  • Add the soaked beans and broth or water to the pot.
  • Season with bay leaf, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 1.5-2 hours until beans are tender.
  • Adjust seasoning and add any additional vegetables or protein during the last 10-15 minutes of cooking.
  • Serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. This soup can also be frozen for up to 3 months.
