Ingredients
  

  • 1 cup kidney beans
  • 1 cup black beans
  • 1 cup pinto beans
  • 1 cup navy beans
  • 1 cup garbanzo beans
  • 1 cup lima beans
  • 1 cup cannellini beans
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 8 cups vegetable stock
  • 2 bay leaves
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1 teaspoon cumi
  • Salt and pepper to taste

Instructions
 

  • Sort and rinse the beans, then soak them overnight or use the quick soak method.
  • In a large pot, heat oil and sauté onions, carrots, celery, and garlic until softened.
  • Add the soaked beans and cover with vegetable stock.
  • Stir in herbs and spices, then bring to a boil.
  • Reduce heat and simmer for 1.5 to 2 hours until beans are tender.
  • Adjust seasoning and serve hot.

Notes

For a creamier texture, blend a portion of the soup and stir it back in. Store leftovers in airtight containers for up to 4 days in the refrigerator or freeze for up to 3 months.
