  • 4 boneless, skinless chicken breasts
  • ½ cup honey
  • ¼ cup Dijon mustard
  • 2 tablespoons mayonnaise
  • 8 strips of baco
  • 1 cup sliced mushrooms
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • Butter or oil for sautéing
  • Salt and pepper to taste
  • Optional: garlic powder, paprika

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Marinate the chicken breasts in olive oil, garlic powder, paprika, salt, and pepper for 30 minutes.
  • Sear the chicken in a hot skillet for 2-3 minutes per side until golden.
  • Prepare the honey mustard sauce by whisking together honey, Dijon mustard, and mayonnaise until smooth.
  • Cook bacon until crispy and sauté mushrooms in butter until tender.
  • Layer the chicken in a baking dish, coat with honey mustard sauce, top with mushrooms, bacon, and cheese.
  • Bake for 20-25 minutes until the chicken is cooked through and cheese is melted.

Notes

For a lighter version, use turkey bacon and low-fat cheese. Serve with steamed vegetables or fries.
