Ingredients
  

  • 1 pound thinly sliced deli roast beef
  • 4 large onion rolls or Kaiser rolls
  • 2 cups sharp cheddar cheese, shredded
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1½ cups whole milk
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika

Instructions
 

  • Step 1: In a medium saucepan over medium heat, melt the butter completely. Whisk in the flour and cook for one minute, stirring constantly.
  • Step 2: Gradually add the milk to the butter-flour mixture, whisking continuously until the mixture thickens, about three to four minutes.
  • Step 3: Remove from heat and add the cheddar cheese, Worcestershire sauce, garlic powder, salt, pepper, and paprika. Whisk until smooth.
  • Step 4: Warm the roast beef in a skillet over medium heat for two to three minutes.
  • Step 5: Slice the rolls in half and lightly toast them if desired.
  • Step 6: Assemble the sandwiches by placing the roast beef on the bottom half of each roll, ladling the cheddar sauce over the beef, and topping with the other half of the roll.

Notes

Use freshly grated cheese for a smoother sauce. Keep the heat low to prevent lumps in the cheese sauce. Store components separately to avoid soggy bread.
