  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Optional: white chocolate chips, chopped nuts, crushed vanilla wafers

Instructions
 

  • Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add mashed bananas, egg, and vanilla extract to the creamed mixture and beat until smooth.
  • In a separate bowl, whisk together flour, pudding mix, baking soda, and salt.
  • Gradually fold the dry ingredients into the wet mixture until a smooth dough forms.
  • If desired, stir in optional add-ins like white chocolate chips or nuts.
  • Use a cookie scoop to portion out dough balls onto the prepared baking sheets, leaving space between each.
  • Bake for 10-12 minutes until lightly golden around the edges but still soft in the center.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
