  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup fresh or jarred cherries, chopped
  • 1 cup chocolate chips (white, milk, or dark)

Instructions
 

  • Preheat your oven to 350°F (175°C) and prepare your cake pans by greasing them and lining them with parchment paper.
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  • In another bowl, combine the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, alternating with the milk, until just combined.
  • Fold in the chopped cherries and chocolate chips gently.
  • Pour the batter into the prepared pans and smooth the tops.
  • Bake for 25-30 minutes for layers or 35-40 minutes for a single cake, or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool before frosting.

Notes

Use ripe, firm cherries for the best flavor. Substitute buttermilk for milk for a softer crumb. Experiment with different types of chocolate chips for variations.
