Ingredients
  

  • 2 Cups Full-Fat Plain Greek Yogurt
  • 1 Cup Fresh Cherries, pitted and halved or quartered
  • 1/2 Cup Dark Chocolate Chips, at least 60% cacao
  • 3 Tablespoons Honey or Maple Syrup
  • 1 Teaspoon Vanilla Extract
  • 1/8 Teaspoon Pinch of Salt

Instructions
 

  • In a medium-sized mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Whisk until smooth.
  • Gently fold in half of the halved cherries and half of the dark chocolate chips.
  • Line a large baking sheet with parchment paper. Pour the yogurt mixture onto the sheet and spread it into an even layer, about 1/4 to 1/2 inch thick.
  • Scatter the remaining cherries and chocolate chips over the surface and lightly press them into the yogurt.
  • Place the baking sheet in the freezer and let it freeze for at least 3 to 4 hours, or until firm.
  • Once frozen, lift the parchment paper off the tray and break the bark into rustic pieces.

Notes

Use full-fat yogurt for a creamier texture. Pat cherries dry if they are juicy to avoid icy patches. Store in an airtight container with parchment paper between layers.
