Ingredients
  

  • 1 lb chicken (breast or thighs)
  • 1 lb ham (smoked or cured)
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 4 cups chicken stock or water
  • 2 bay leaves
  • 1 tsp thyme
  • Salt and pepper to taste
  • Optional: cream, noodles, or rice

Instructions
 

  • Heat olive oil in a large stockpot over medium heat.
  • Add diced onions, carrots, and celery; sauté for 5–7 minutes until softened.
  • Pour in chicken stock to cover the vegetables; bring to a gentle boil.
  • Add bay leaves, thyme, and simmer for 20–30 minutes.
  • Add chicken pieces and cook for 15–20 minutes until fully cooked.
  • Stir in diced ham and simmer for an additional 10 minutes.
  • Adjust seasonings and add optional ingredients if desired.

Notes

This soup can be made in a slow cooker by adding all ingredients and cooking on low for 6–8 hours. Adjust seasoning before serving.
