Ingredients
  

  • 1-2 pounds boneless, skinless chicken thighs or breasts
  • 2-3 chipotle peppers in adobo sauce
  • 1-2 tablespoons adobo sauce
  • 3-4 cloves garlic, minced
  • Juice from 1-2 limes
  • 2-3 tablespoons olive oil
  • 1 teaspoon ground cumi
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: 1 tablespoon honey, 1 teaspoon oregano, 1 teaspoon chili powder, 1 teaspoon onion powder, fresh cilantro for garnish

Instructions
 

  • In a mixing bowl, combine chopped chipotle peppers, adobo sauce, minced garlic, lime juice, olive oil, ground cumin, paprika, salt, and pepper.
  • Whisk until smooth and adjust seasoning as needed.
  • Marinate the chicken in the mixture for at least 30 minutes, preferably 4-6 hours or overnight.
  • Cook the chicken using your preferred method: grill for 5-7 minutes per side, bake at 400°F for 20-30 minutes, or sear in a skillet for 5-7 minutes per side until cooked through.
  • Serve with your choice of sides or toppings.

Notes

Ensure to marinate for at least 30 minutes for flavor infusion. Adjust chipotle peppers based on desired spice level. Use an instant-read thermometer to check for doneness (165°F).
