  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • ¾ cup shredded coconut
  • ¾ cup chopped pecans
  • ¾ cup semi-sweet chocolate chips
  • ¾ cup brown sugar, packed
  • ½ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamo

Instructions
 

  • Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  • In a medium bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside.
  • In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  • Beat in the egg and vanilla extract until well combined.
  • Gradually mix in the flour mixture until just combined.
  • Stir in oats, coconut, pecans, and chocolate chips until evenly distributed.
  • Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, until edges are lightly golden but centers still look slightly underbaked.
  • Cool on baking sheets for 5 minutes before transferring to a wire rack.

Notes

Toast pecans for enhanced flavor. Use room temperature ingredients for better mixing. Don't overbake; cookies should look slightly underdone when removed from the oven. For thicker cookies, chill dough before baking.
