  • 1 pound pizza dough or 2 pieces naan bread
  • 1 cup fresh or dried cranberries
  • 6 ounces goat cheese, softened
  • 3 tablespoons olive oil
  • 2 tablespoons fresh thyme leaves
  • 1/2 small red onion, thinly sliced
  • 2 cups arugula or baby spinach
  • 2 tablespoons balsamic glaze
  • Salt and black pepper to taste
  • 1/3 cup chopped walnuts (optional)

Instructions
 

  • Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating.
  • Roll out your pizza dough on a floured surface to about 12 inches in diameter, or arrange naan breads on your baking sheet. Brush the surface generously with olive oil.
  • Crumble the softened goat cheese evenly across the dough, leaving some chunks for texture. Scatter the cranberries and thinly sliced red onion over the goat cheese.
  • Sprinkle fresh thyme leaves across your flatbread, then season lightly with salt and pepper. If using walnuts, add them now.
  • Bake for 12-15 minutes until the edges turn golden brown and the goat cheese melts. Remove from oven and let cool for 2-3 minutes.
  • Top the warm flatbread with fresh arugula and drizzle with balsamic glaze. Slice immediately and serve.
