Ingredients
  

  • 6 cups mixed baby greens
  • 1/2 cup dried cranberries
  • 4 oz goat cheese
  • 1/2 cup candied pecans
  • 1/4 medium red onio
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • In a small bowl, whisk together olive oil, balsamic vinegar, honey, and Dijon mustard until emulsified. Season with salt and pepper.
  • Wash and dry the mixed greens thoroughly.
  • Thinly slice the red onion.
  • In a large salad bowl, combine the greens with half of the dressing and toss to coat.
  • Top the dressed greens with dried cranberries, crumbled goat cheese, candied pecans, and sliced red onion.
  • Drizzle with remaining dressing just before serving.

Notes

Use fresh ingredients for the best flavor. Dress the salad just before serving to prevent wilting.
