Ingredients
  

  • Boneless, skinless chicken breasts or thighs
  • Pesto sauce
  • Heavy cream
  • Grated Parmesan cheese
  • Fresh garlic, minced

  • Optional: sun-dried tomatoes, spinach, mushrooms, red pepper flakes, pine nuts

Instructions
 

  • Pat the chicken dry and season with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Sear the chicken for 4-5 minutes on each side until golden brown and cooked through.
  • Remove the chicken and set aside, covering it to keep warm.
  • In the same skillet, sauté minced garlic until fragrant.
  • Add heavy cream and stir, scraping up any browned bits.
  • Incorporate pesto and bring to a simmer.
  • Add grated Parmesan and stir until the sauce thickens.
  • Return the chicken to the skillet, spooning sauce over it, and simmer for 5-7 minutes.
  • Serve over pasta, rice, or with roasted vegetables.

Notes

Use fresh ingredients for the best flavor. Adjust seasoning to taste. Can be made vegetarian by substituting chicken with tofu.
