Ingredients
  

  • 2 cups short-grain rice (sushi or arborio)
  • 1 lb ground beef or turkey
  • 1 cup shredded cheddar or American cheese
  • 4 cups romaine or iceberg lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onions, sliced
  • 1/2 cup pickles, sliced
  • Salt and black pepper to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tbsp Worcestershire sauce (optional)
  • 1 tbsp mustard
  • Oil for frying
  • Dressing of choice (Big Mac-style, Thousand Island, etc.)

Instructions
 

  • Rinse the rice under cold water until the water runs clear, then cook according to package instructions and let it cool completely.
  • Mix in a pinch of salt and a splash of rice vinegar or soy sauce for flavor.
  • Press the cooled rice into a flat layer and chill in the fridge for 30 minutes.
  • Heat oil in a nonstick skillet over medium heat, cut the rice into squares, and fry until golden brown and crispy.
  • In a separate pan, heat oil and cook the ground meat until browned, then season with salt, pepper, garlic powder, onion powder, smoked paprika, and Worcestershire sauce.
  • Melt cheese over the cooked meat, cover until melted, then set aside.
  • Assemble the salad by layering greens, tomatoes, onions, and pickles, then add the crispy rice and cheeseburger topping.
  • Drizzle with dressing and add any additional toppings before serving.

Notes

Store crispy rice separately to maintain its crunch. Use plant-based meat for a vegetarian option.
