  • 2 large English cucumbers, diced into half-moons
  • 2 cups cherry or grape tomatoes, halved lengthwise
  • 6 ounces feta cheese, crumbled or cubed
  • 1/2 small red onion, thinly sliced
  • 1/4 cup fresh parsley, finely chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions
 

  • Prepare the vegetables by washing them thoroughly and slicing the cucumbers, tomatoes, and red onion.
  • Whisk together the olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl.
  • Combine the cucumbers, tomatoes, and red onions in a large mixing bowl and pour the vinaigrette over them, tossing gently.
  • Add the parsley and feta cheese, folding them in carefully to avoid breaking the feta.
  • Let the salad sit at room temperature for 15 to 20 minutes before serving.
