Ingredients
  

  • 2¾ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup unsalted butter, softened
  • 1½ cups granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 12 oz chocolate chips or candy melts
  • 1 tbsp coconut oil

Instructions
 

  • Preheat your oven to 375°F and line baking sheets with parchment paper.
  • In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  • In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  • Beat in eggs one at a time, followed by vanilla extract. Mix in the flour mixture until just combined.
  • Roll the dough into 1½-inch balls and place them 2 inches apart on prepared baking sheets.
  • Bake for 8-10 minutes until the edges are set but centers still look slightly soft. Cool completely on wire racks.
  • Melt chocolate chips or candy melts with coconut oil in 30-second intervals until smooth.
  • Dip each cooled cookie halfway into the melted chocolate, allowing excess to drip back into the bowl. Place on parchment paper to set.

Notes

Ensure cookies are completely cool before dipping to prevent chocolate from sliding off. Store in airtight containers for up to one week.
