  • 3 cups Cooked chicken, shredded or diced Preferably from a rotisserie chicken for added flavor.
  • 1 bag Doritos, family-sized (Nacho Cheese is a classic choice)
  • 2 cans Cream of chicken soup, 10.5 ounces each
  • 1 cup Sour cream Adds richness and a tangy note.
  • 2 cups Cheddar cheese, shredded Sharp cheddar works best.
  • 1 can Diced tomatoes with green chilies (Rotel is a popular option.)
  • Salt, pepper, garlic powder, onion powder To taste.

Preparing the Ingredients

  • If not using pre-cooked chicken, boil or bake boneless, skinless chicken breasts or thighs until fully cooked. Shred or dice the meat.
  • Gently crush the Doritos inside the bag or in a bowl to create bite-sized pieces. Be careful not to pulverize them into crumbs.
  • In a large mixing bowl, combine the cream of chicken soup, sour cream, diced tomatoes with green chilies, and preferred seasonings. Stir until smooth.

Layering the Perfect Casserole

  • Preheat the oven to 350°F (175°C) and grease a 9×13-inch casserole dish with cooking spray.
  • Spread a layer of crushed Doritos evenly across the bottom of the dish.
  • Add half of the shredded chicken over the Doritos.
  • Spread half of the sauce mixture over the chicken.
  • Add another layer of Doritos, followed by the remaining chicken and sauce.
  • Finish with a generous layer of shredded cheddar cheese.

Baking to Golden Perfection

  • Cover the dish with aluminum foil and bake for 20 minutes to allow the casserole to heat through.
  • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let the casserole rest for 5 minutes before serving.

Notes

For maximum crunch, add a layer of fresh Doritos just before serving or after reheating. You can customize with vegetables or hot sauce.
