Ingredients

  • 6 cups fresh watermelon (cubed and frozen)
  • 2 tablespoons fresh lime juice
  • 2-3 tablespoons honey or agave nectar (to taste)
  • A tiny pinch of fine sea salt
  • 1-4 tablespoons water or coconut water (as needed)

Instructions

  • Cut a fresh, seedless watermelon into small, uniform cubes, roughly one inch in size.
  • Line a large baking sheet with parchment paper and spread the watermelon cubes in a single layer. Freeze for at least 4 to 6 hours until solid.
  • Place the frozen watermelon cubes into a high-speed blender or food processor.
  • Add the fresh lime juice, sweetener, and a pinch of salt over the frozen fruit.
  • Blend on low, gradually increasing the speed, adding water or coconut water as needed until smooth.
  • Serve immediately for a soft texture or transfer to a container and freeze for an additional 2 hours for a scoopable sorbet.

Notes

Ensure to taste the watermelon before freezing to adjust sweetness. Use a metal container for freezing for better results.
