Ingredients
  

  • 3 large ripe bananas
  • 1/3 cup creamy peanut butter
  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil
  • Flaky sea salt to taste
  • 2 tablespoons crushed peanuts

Instructions
 

  • Line a large baking sheet with parchment paper.
  • Peel the bananas and slice them into uniform rounds, about half an inch thick.
  • Lay half of the banana slices on the prepared baking sheet.
  • Place a small dollop of peanut butter onto the center of each slice and top with a second banana slice to create a sandwich.
  • Freeze the banana sandwiches for 30 to 60 minutes.
  • Melt the chocolate chips and coconut oil in a microwave-safe bowl, stirring until smooth.
  • Dip each frozen banana sandwich into the melted chocolate, letting excess chocolate drip off.
  • Place the chocolate-coated bites back on the parchment paper and sprinkle with sea salt or crushed peanuts if desired.
  • Return to the freezer for another hour until the chocolate is firm.

Notes

Ensure bananas are ripe but firm for best results. Store in an airtight container in the freezer for up to two months.
