Ingredients
  

  • 1.5 Cups Graham Cracker Crumbs
  • 6 Tablespoons Melted Unsalted Butter
  • 2 Tablespoons Granulated Sugar
  • 1 Pound Fresh Strawberries (hulled)
  • 1/2 Cup Fresh Lime Juice
  • 1 Tablespoon Lime Zest
  • 1/4 Cup White Rum (optional)
  • 1 Cup Low-fat Greek Yogurt
  • 1/2 Cup Sweetened Condensed Milk
  • Sliced Strawberries (for topping)

Instructions
 

  • Prepare the Pan: Line an 8x8 inch square baking pan with parchment paper.
  • Make the Crust: In a medium bowl, stir together the graham cracker crumbs, melted butter, and sugar. Press into the bottom of the pan and bake at 350°F for 8 to 10 minutes. Let cool.
  • Blend the Fruit: Blend hulled strawberries, lime juice, and lime zest until smooth.
  • Combine the Base: In a bowl, whisk Greek yogurt and sweetened condensed milk, then fold in the strawberry puree and rum.
  • Assemble: Pour the mixture over the cooled crust and smooth the top.
  • Freeze: Freeze for at least 6 hours until firm.
  • Garnish and Slice: Lift out of the pan, slice into squares, and garnish with sliced strawberries.

Notes

Store in an airtight container in the freezer for up to two weeks. Let sit for 3 to 5 minutes before serving to soften slightly.
