Ingredients
  

  • 1.5 cups all-purpose flour
  • 1.5 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • 1/2 cup whole milk
  • 1/3 cup rainbow sprinkles (jimmies)
  • 1/4 to 1/2 cup cream cheese frosting
  • 12 oz white candy melts or high-quality white chocolate
  • 1 tsp coconut oil
  • Extra sprinkles
  • 20-24 cake pop sticks

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit. Grease and flour an 8-inch square baking pan.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a separate large bowl, cream the softened butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Be careful not to overmix.
  • Gently fold in the rainbow sprinkles. Pour the batter into the prepared pan and bake for 25 to 30 minutes. Let the cake cool completely.
  • Crumble the cooled cake into fine pieces in a large bowl. Add 1/4 cup of frosting and mix until the dough holds together.
  • Roll about one tablespoon of the mixture into a tight ball and place on a parchment-lined baking sheet. Chill in the refrigerator for at least two hours.
  • Melt the white candy melts or white chocolate in the microwave in 30-second intervals, stirring in between. If too thick, stir in coconut oil.
  • Dip the tip of a cake pop stick into the melted chocolate and insert it halfway into a chilled cake ball.
  • Dip each cake pop into the melted chocolate, let excess drip off, and immediately add sprinkles. Place in a styrofoam block to dry completely.

Notes

Store in an airtight container in the refrigerator for up to one week or freeze for up to six weeks. Enjoy chilled or at room temperature.
