Ingredients
  

  • 1 lb Lean Ground Beef (90% lean)
  • 3 cups Cooked White or Brown Rice
  • 2 tbsp Chili Powder, Cumin, Garlic Powder, Onion Powder, Smoked Paprika
  • 2 cups Romaine Lettuce (shredded)
  • 1 can (15 oz) Black Beans (rinsed and drained)
  • 1 cup Corn (fresh, frozen, or canned)
  • 1 cup Cherry Tomatoes (halved)
  • 1 large Fresh Avocado (sliced)
  • 1/4 cup Red Onion (finely diced)
  • Fresh Cilantro and Lime Wedges (for garnish)
  • 1/2 cup Shredded Cheddar or Cotija Cheese

Instructions
 

  • Prepare the Rice: Cook rice according to package instructions, preferably in broth. Fluff and stir in lime juice and cilantro.
  • Brown the Beef: In a skillet over medium-high heat, cook ground beef until no longer pink, breaking it into small crumbles. Drain excess fat.
  • Season the Meat: Lower heat, add spices and a quarter cup of water or broth, and simmer for 3-5 minutes until a light sauce forms.
  • Prepare the Toppings: Chop lettuce, halve tomatoes, slice avocado, and rinse beans and corn.
  • Assemble the Bowls: In bowls, layer rice, seasoned beef, and arrange toppings around the beef.
  • Add Final Touches: Top with avocado, red onions, cheese, cilantro, and lime wedges. Serve immediately.
