Ingredients
  

  • 1 lb (450g) ground sausage (mild or spicy)
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 zucchini, sliced
  • 1 cup (150g) cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Dice the onion and bell pepper, slice the zucchini, and halve the cherry tomatoes. Mince the garlic for added flavor.
  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground sausage and cook until browned and fully cooked, breaking it into crumbles with a spatula. Remove the sausage and set aside.
  • In the same skillet, add the remaining olive oil. Sauté the onion and garlic until fragrant, about 2 minutes. Add the bell pepper, zucchini, and cherry tomatoes. Sprinkle with paprika, salt, and pepper. Cook for 5-7 minutes until the vegetables are tender.
  • Return the sausage to the skillet, stirring to combine with the vegetables. Let it cook for another 2-3 minutes to allow flavors to meld. Garnish with chopped parsley and serve warm.

Notes

Add cooked quinoa or rice for a heartier dish. Sprinkle shredded cheese over the skillet for a cheesy upgrade. For extra heat, add crushed red pepper flakes.
