Ingredients
  

  • 1.5 lbs Ground Turkey (93% lean)
  • 16 oz Spaghetti Noodles (whole wheat or gluten-free)
  • 2 tbsp Olive Oil (extra virgin)
  • 1 large Yellow Onion (finely diced)
  • 4 cloves Garlic Cloves (freshly minced)
  • 28 oz can Crushed Tomatoes (fire-roasted recommended)
  • 2 tbsp Tomato Paste
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • 1/2 tsp Red Pepper Flakes (optional)
  • 1/4 cup Fresh Parsley (chopped)
  • Salt and Black Pepper (to taste)

Instructions
 

  • Step 1: Prepare the Pasta - Bring a large pot of salted water to a rolling boil. Add spaghetti noodles and cook until al dente. Reserve half a cup of pasta water before draining.
  • Step 2: Sauté the Aromatics - Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for about five minutes until translucent. Stir in minced garlic and cook for another minute.
  • Step 3: Brown the Ground Turkey - Increase heat and add ground turkey. Break into small crumbles, season with salt and pepper, and cook until no pink remains.
  • Step 4: Build the Sauce - Push meat to the sides, add tomato paste to the center, cook for a minute, then stir in crushed tomatoes, oregano, basil, and red pepper flakes. Simmer gently.
  • Step 5: Simmer and Marry the Flavors - Lower heat and let sauce simmer for 15-20 minutes, adding reserved pasta water if too thick.
  • Step 6: Toss and Serve - Add cooked spaghetti to the sauce, toss until coated, sprinkle with fresh parsley, and serve hot.

Notes

Always season turkey as it browns. Do not overcook pasta. Use reserved pasta water to adjust sauce consistency.
