Ingredients

  • 1 lb Ground Beef (90/10 lean)
  • 1.5 cups Elbow Macaroni (dry, uncooked)
  • 2.5 cups Beef Broth (low sodium preferred)
  • 1 cup Milk (whole)
  • 2 cups Sharp Cheddar Cheese (shredded)
  • 1 tbsp Tomato Paste
  • 1 tbsp Cornstarch
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp Smoked Paprika
  • Salt and Pepper (to taste)

Instructions

  • Brown the beef in a large skillet over medium-high heat until fully cooked, then drain excess fat.
  • Add tomato paste, garlic powder, onion powder, smoked paprika, salt, and pepper to the skillet and cook for 1 minute.
  • Whisk cornstarch into cold beef broth until dissolved, then pour broth and milk into the skillet, scraping up any brown bits.
  • Add dry elbow macaroni, stir, bring to a gentle boil, then reduce heat to low, cover, and simmer for 10-12 minutes.
  • Once pasta is tender and sauce thickens, remove from heat and stir in shredded cheddar cheese until melted.
  • Let sit for 3-5 minutes before serving.

Notes

Grate your own cheese for better melting. Adjust liquid levels if pasta absorbs too much. Use a heavy-bottomed pan for even heat distribution.
