Ingredients
  

  • 1 lb lean ground beef
  • 2 cups diced potatoes
  • 1 cup sliced carrots
  • 1 cup chopped celery
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef or vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 bay leaf
  • Salt and pepper to taste

Instructions
 

  • Brown the ground beef in a skillet over medium heat and drain excess fat.
  • Wash, peel, and chop the vegetables.
  • Layer the diced potatoes, carrots, and celery in the bottom of the crock pot.
  • Add the browned ground beef on top of the vegetables.
  • Pour in the broth and add the diced tomatoes.
  • Sprinkle the herbs and seasonings evenly over the top.
  • Set the crock pot to low and cook for 6-8 hours or high for 3-4 hours.
  • Add tender vegetables like peas or corn in the last 30 minutes of cooking.
  • Garnish with fresh parsley before serving.

Notes

For a keto version, replace potatoes with cauliflower. For vegetarian, use plant-based meat and vegetable broth.
