Ingredients
  

  • 1 large head fresh cauliflower (approx. 4-5 cups riced)
  • 2 tablespoons avocado oil
  • 1/2 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumi
  • 1/2 teaspoon smoked paprika
  • 1/4 cup vegetable broth
  • 1 tablespoon fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • Sea salt & black pepper to taste

Instructions
 

  • Prepare the cauliflower by removing the green leaves and thick central stem, then cut into florets and rice using a box grater or food processor.
  • Heat a large skillet over medium-high heat, add avocado oil, and sauté diced onions for 3-4 minutes until translucent.
  • Add minced garlic and cook for another 30 seconds.
  • Stir in tomato paste, ground cumin, and smoked paprika, mixing thoroughly to toast the spices.
  • Add riced cauliflower to the skillet, stirring to coat with the mixture, then pour in vegetable broth.
  • Cook for 5-7 minutes, stirring frequently until tender-crisp.
  • Remove from heat, squeeze fresh lime juice over the top, sprinkle with cilantro, and season with salt and pepper.

Notes

Avoid overcrowding the pan to prevent sogginess. Use fresh lime juice for the best flavor.
