Ingredients
  

  • 2 cups pumpkin, cubed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken stock
  • 1 teaspoon cinnamo
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cumi
  • 1/2 cup cream or coconut milk (optional)
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions
 

  • Slice the pumpkin in half and scoop out the seeds. Peel and cube the flesh.
  • Sauté diced onions and garlic in a saucepan until fragrant.
  • Add the pumpkin cubes and spices, then pour in the stock. Simmer until the pumpkin is soft.
  • Blend the soup until smooth, adjusting consistency with more stock if needed.
  • Serve with optional cream and garnish with fresh herbs.

Notes

Avoid using carving pumpkins; opt for sugar pumpkins or kabocha for best results. Adjust spices to taste.
