  • 6 medium Roma tomatoes
  • 1/4 cup fresh basil leaves
  • 3 large garlic cloves
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Prepare the Tomato Mixture: Dice the Roma tomatoes into small pieces, sprinkle with half the salt, and let sit for 10 minutes to release moisture.
  • Season the Tomatoes: Add minced garlic, chopped basil, balsamic vinegar, and 2 tablespoons of olive oil to the tomatoes. Season with remaining salt and pepper, then toss and let marinate.
  • Prepare the Bread: Slice the bread into thick pieces and brush both sides with olive oil.
  • Toast the Bread: Heat a grill pan or skillet over medium-high heat and toast the bread for 2-3 minutes per side until golden brown.
  • Add Garlic Flavor: Rub each toasted slice with the cut side of a garlic clove while warm.
  • Assemble and Serve: Top each slice with the tomato mixture, drizzle with remaining olive oil, and serve immediately.

Notes

Use day-old bread for best results. Assemble bruschetta just before serving to maintain crispiness.
