Ingredients
  

  • 1 cup unsalted butter
  • 2 shallots, finely chopped
  • 1/2 cup dry white wine
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • Salt and pepper to taste

Instructions
 

  • Melt a small knob of butter in a saucepan over medium heat and sauté the shallots until softened.
  • Deglaze the pan with white wine and simmer until reduced by half.
  • Reduce heat to low and whisk in cold butter, one cube at a time, until fully emulsified.
  • Stir in lemon juice and zest, and season with salt and pepper.

Notes

Use fresh lemon juice and zest for the best results. Avoid overcooking after adding lemon to prevent separation.
