Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 cup mini marshmallows
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, white sugar, and brown sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.
  • Fold in the mini marshmallows gently.
  • Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 8-12 minutes, until the edges are golden brown but the centers are still soft.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Chill the dough for 30 minutes before baking for thicker cookies. Use mini marshmallows for even melting.
