Ingredients
  

  • 1 lb ground beef
  • 1/2 lb spicy chorizo
  • 1 cup breadcrumbs or crushed tortilla chips
  • 2 eggs
  • 1 cup chopped onions
  • 1/2 cup chopped cilantro
  • 1/2 cup black beans
  • 1/2 cup corn kernels
  • 1 tsp cumi
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 cup diced jalapeños
  • 1 cup shredded cheese (Monterey Jack or Cheddar)
  • 1/2 cup salsa

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine ground beef, chorizo, breadcrumbs, eggs, onions, cilantro, black beans, corn, spices, and jalapeños.
  • Mix everything together until just combined.
  • Shape the mixture into a loaf on a lined baking sheet or in a loaf pan.
  • Spread a layer of salsa on top and sprinkle with shredded cheese.
  • Bake for 45–60 minutes, or until the internal temperature reaches 160°F (71°C).
  • Let it rest for 10 minutes before slicing.

Notes

To keep your meatloaf moist, avoid overmixing and consider adding moist ingredients like salsa or diced tomatoes. Adjust the spice level to your preference.
