Ingredients
  

  • 1.5 Cups Basmati or Jasmine Rice
  • 2 Tablespoons Olive Oil
  • 1 Medium Yellow Onion (diced)
  • 3 Cloves Garlic (minced)
  • 1 Can (14.5 oz) Crushed Tomatoes
  • 2 Cups Vegetable or Chicken Broth
  • 1 Teaspoon Smoked Paprika
  • 1/2 Teaspoon Dried Oregano
  • Salt and Black Pepper to taste
  • 1/4 Cup Fresh Parsley or Cilantro (chopped)

Instructions
 

  • Rinse the rice under cold water until the water runs clear.
  • Heat olive oil in a large pot over medium heat. Add diced onions and sauté until translucent.
  • Stir in minced garlic and cook for another minute.
  • Add the rinsed rice to the pot and toast for about two minutes.
  • Pour in crushed tomatoes, broth, smoked paprika, and dried oregano. Season with salt and black pepper.
  • Bring to a gentle boil, then reduce heat to low and cover the pot.
  • Simmer undisturbed for 18 to 20 minutes.
  • Remove from heat and let it rest for 5 to 10 minutes.
  • Fluff the rice with a fork and stir in fresh parsley or cilantro.

Notes

Use a heavy-bottomed pot for even cooking. Rinsing the rice is crucial for fluffiness. Adjust liquid if using brown rice.
