Ingredients
  

  • 1 pound orzo pasta
  • 5 oz fresh spinach
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 3 cups low-sodium chicken broth
  • ½ cup heavy cream
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • Salt to taste
  • Black pepper to taste

Instructions
 

  • Heat olive oil and butter in a large pot over medium heat. Add minced garlic and sauté for about 30 seconds.
  • Add orzo pasta and stir constantly for 2-3 minutes until lightly golden.
  • Gradually add warm chicken broth, one cup at a time, stirring frequently until absorbed, about 12-15 minutes.
  • When orzo is al dente, reduce heat to low and add spinach in handfuls, stirring gently.
  • Remove from heat and stir in heavy cream and grated Parmesan cheese until smooth. Season with salt and pepper.

Notes

Use freshly grated Parmesan for best results. Store leftovers in an airtight container for up to 3 days. Reheat gently with a splash of liquid.
