Ingredients
  

  • 2 lbs cherry tomatoes
  • 1 lb pasta (spaghetti, linguine, or penne)
  • 1/2 cup extra virgin olive oil
  • 6 cloves garlic
  • 1/2 tsp red pepper flakes
  • 1/2 cup fresh basil
  • 1/2 cup Parmesan cheese
  • Salt and black pepper to taste
  • 1/2 cup pasta water

Instructions
 

  • Preheat your oven to 400°F (200°C) and prepare a large rimmed baking sheet.
  • Place the cherry tomatoes on the baking sheet and drizzle with olive oil. Add sliced garlic, red pepper flakes, salt, and black pepper. Toss to coat.
  • Roast in the oven for 20 to 25 minutes until tomatoes burst and skins char.
  • While tomatoes roast, boil a large pot of salted water and cook pasta until al dente. Reserve 1/2 cup of pasta water before draining.
  • Combine roasted tomatoes, garlic, and oils with the cooked pasta in the pot.
  • Add reserved pasta water and toss over low heat to emulsify the sauce.
  • Stir in torn basil and half of the Parmesan cheese. Adjust seasoning if necessary.
  • Serve immediately, topped with remaining cheese and a drizzle of olive oil.

Notes

Use high-quality olive oil for the best flavor. Ensure tomatoes are not overcrowded on the baking sheet for optimal roasting.
