  • 6 to 7 large fresh peaches
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar (divided)
  • 1/2 cup unsalted butter (cold)
  • 1 teaspoon ground cinnamo
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease a 9-inch square baking dish.
  • Slice the peaches into half-inch thick wedges and place them in a large mixing bowl.
  • Add lemon juice, vanilla extract, and 2 tablespoons of brown sugar to the peaches and toss gently.
  • Arrange the peaches evenly in the prepared baking dish.
  • In a separate bowl, combine rolled oats, flour, remaining brown sugar, cinnamon, and salt.
  • Cut in the cold butter until the mixture resembles pea-sized crumbs.
  • Sprinkle the oat mixture evenly over the peaches without pressing it down.
  • Bake for 35 to 40 minutes until the topping is golden brown and juices are bubbling.
  • Let it cool for at least 10 minutes before serving.

Notes

Use cold butter for a crisp topping. You can substitute peaches with nectarines or add berries for variation.
