Ingredients
  

  • 4 salmon fillets (6 oz each)
  • 1/2 cup basil pesto
  • 1 large lemo
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 cup freshly grated parmesan cheese
  • Salt and pepper to taste
  • 1 cup cherry tomatoes (optional)

Instructions
 

  • Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius) and line a baking sheet with parchment paper.
  • Pat the salmon fillets dry and place them on the prepared baking sheet.
  • Drizzle the salmon with olive oil and lemon juice, then season with salt and pepper.
  • Spread about two tablespoons of basil pesto on each salmon fillet.
  • Sprinkle freshly grated parmesan cheese over the pesto and add lemon slices on top.
  • Bake for 12 to 15 minutes until the salmon flakes easily and reaches an internal temperature of 145 degrees Fahrenheit.
  • Let the salmon rest for a few minutes before serving.

Notes

Use fresh salmon for the best results. Avoid overcooking by checking the internal temperature. Store leftovers in an airtight container for up to three days.
