Ingredients
  

  • 2 cups cooked chicken breast (shredded or cubed)
  • 2 medium ripe avocados
  • 1/4 cup red onion (finely diced)
  • 1-2 tablespoons fresh lime juice
  • 2 tablespoons fresh cilantro (chopped)
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions
 

  • Shred or cube the cooked chicken and place it in a large mixing bowl.
  • Slice the avocados in half, remove the pits, and scoop the flesh into a small bowl. Mash the avocado to your desired consistency and stir in lime juice.
  • Add the mashed avocado to the chicken bowl along with red onion, cilantro, and garlic powder. Fold the ingredients together gently.
  • Season with salt and black pepper to taste. Serve immediately.

Notes

Store leftovers in an airtight container with plastic wrap pressed against the surface to minimize browning. Best consumed within 24 hours.
