Ingredients
  

  • 4-6 large flour tortillas
  • 2 cups cooked protein (chicken, beef, or beans)
  • 1 cup cooked rice
  • 1 can (15 oz) black beans, drained
  • 1 cup shredded Mexican cheese blend
  • ½ medium onion, diced
  • 2 cloves minced garlic
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups sharp cheddar cheese, shredded
  • ½ teaspoon cumi
  • ½ teaspoon paprika
  • Salt and pepper to taste

Instructions
 

  • Step 1: Prepare the Filling - Heat a large skillet over medium heat and sauté the diced onion until translucent, about 4-5 minutes. Add minced garlic and cook for another minute until fragrant. Stir in your cooked protein, rice, and black beans, seasoning with salt, pepper, and a pinch of cumin. Mix everything thoroughly and remove from heat.
  • Step 2: Assemble the Burritos - Warm the tortillas in the microwave for 30 seconds to make them more pliable. Place about ¾ cup of filling in the center of each tortilla, sprinkle with a handful of cheese, then roll tightly by folding in the sides and rolling from bottom to top. Place seam-side down in a greased 9x13 baking dish.
  • Step 3: Create the Cheese Sauce - In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes to eliminate the raw flour taste. Gradually add milk while whisking continuously to prevent lumps. Continue whisking until the mixture thickens, about 5-7 minutes. Remove from heat and stir in shredded cheese, cumin, and paprika until smooth.
  • Step 4: Smother and Bake - Pour the warm cheese sauce evenly over the assembled burritos, making sure each one is completely covered. Bake at 375°F for 20-25 minutes until the sauce is bubbly and the edges are lightly golden. Let rest for 5 minutes before serving.

Notes

Store leftover smothered burritos in the refrigerator for up to 4 days. For reheating, use the oven at 350°F for 15-20 minutes, covering with foil. You can also freeze these burritos for up to 3 months.
