Ingredients
  

  • 6 pieces of chicken (thighs, drumsticks, or breasts)
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying
  • 4 bone-in beef chops
  • 1/2 cup all-purpose flour (plus extra for dredging)
  • 2 cups chicken broth
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 2 lbs fresh collard greens or mustard greens
  • 1 smoked turkey leg, ham hock, or 4 slices of thick-cut baco
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon crushed red pepper flakes (optional)
  • 1/2 teaspoon sugar
  • Salt and pepper to taste
  • 1 lb elbow macaroni or cavatappi pasta
  • 4 cups shredded cheese (sharp cheddar, mozzarella, gouda)
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/4 cup unsalted butter
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs or crushed crackers for topping (optional)
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar (optional)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk (or whole milk with a splash of vinegar)
  • 2 large eggs
  • 1/4 cup unsalted butter, melted

Instructions
 

  • Marinate the chicken in buttermilk for at least 4 hours or overnight.
  • Prepare the coating for the chicken by mixing flour, paprika, garlic powder, cayenne pepper, salt, and black pepper.
  • Coat the chicken in the seasoned flour and fry in hot oil until golden brown.
  • For smothered beef chops, season and dredge the beef in flour, then sear in a skillet.
  • Make gravy in the same skillet with onions, garlic, and chicken broth, then simmer the beef chops in the gravy.
  • Prepare collard greens by rinsing, chopping, and simmering with broth and optional smoked meat.
  • Cook macaroni and cheese by making a cheese sauce and combining it with cooked pasta, then bake until golden.
  • Prepare cornbread by mixing dry and wet ingredients, then bake in a hot skillet.

Notes

Ensure to taste-test your seasoning before cooking. Adjust spices to your liking. Use a meat thermometer for perfectly cooked meat.
