Ingredients
  

  • 8 oz Rotini or Penne Pasta
  • 2 cups Grilled Chicken Breast (diced)
  • 1 cup Cherry Tomatoes
  • 1 cup English Cucumber
  • 1/2 cup Feta Cheese
  • 1/4 cup Kalamata Olives
  • Olive Oil
  • Lemon Juice
  • Dried Oregano
  • Garlic
  • 1/4 cup Toasted Pine Nuts or Sunflower Seeds

Instructions
 

  • Cook the Pasta: Bring a large pot of salted water to a boil. Add your chosen pasta and cook until it is al dente. Drain and rinse with cold water immediately.
  • Prepare the Dressing: In a small bowl or a mason jar, whisk together olive oil, lemon juice, minced garlic, and dried oregano. Season with salt and pepper.
  • Chop the Vegetables: Dice cucumbers and halve cherry tomatoes. Chop olives if desired.
  • Combine Ingredients: In a large bowl, toss cooled pasta with chicken, tomatoes, cucumbers, olives, and feta. Pour dressing over and mix gently.
  • Add Final Touches: Sprinkle toasted pine nuts or seeds over the salad.
  • Portion for the Week: Divide into airtight containers and refrigerate.

Notes

To keep the salad fresh, store dressing separately if preparing in advance. Use sturdy vegetables to prevent sogginess.
