  • 6 large egg yolks
  • 3/4 cup granulated sugar
  • 1 1/3 cups mascarpone cheese
  • 1 3/4 cups heavy whipping cream
  • 2 cups strong espresso
  • 3 tablespoons coffee liqueur
  • 2 packages (7 oz each) ladyfinger cookies
  • Unsweetened cocoa powder for dusting

Instructions
 

  • Whisk egg yolks with half the sugar in a large bowl until pale and thick, about 5 minutes.
  • Fold softened mascarpone into the egg mixture gently.
  • In a separate bowl, whip heavy cream with remaining sugar until soft peaks form.
  • Fold whipped cream into the mascarpone mixture carefully.
  • Combine cooled espresso with coffee liqueur in a shallow dish.
  • Dip each ladyfinger into the coffee mixture for 2-3 seconds per side.
  • Arrange dipped ladyfingers in a single layer in your serving dish.
  • Spread half the mascarpone mixture over the ladyfingers.
  • Repeat with another layer of coffee-dipped ladyfingers and top with remaining mascarpone mixture.
  • Cover tightly with plastic wrap and refrigerate for at least 4 hours.
  • Dust with cocoa powder before serving.

Notes

Ensure mascarpone is at room temperature before mixing. Work quickly when dipping ladyfingers to avoid sogginess. Chilling overnight is recommended for best flavor.
