Instructions

  • Add garlic, thyme, bay leaves, salt, and pepper; stir for 1 minute.
  • Pour in the broth and bring to a gentle boil.
  • Add rice and turkey, reduce heat to low, and let simmer for 20-30 minutes until rice is tender.
  • Adjust consistency with more broth if needed.
  • Taste and adjust seasonings, then garnish with fresh parsley before serving.

Notes

For a creamy version, stir in heavy cream or a non-dairy alternative after cooking the soup base. To make it spicy, add chili powder or hot sauce.
