Ingredients
  

  • 3-4 medium-sized carrots, chopped
  • 4-5 large ripe tomatoes, chopped or 2 cups canned tomatoes
  • 1 medium onion, chopped
  • 2-3 cloves garlic, minced
  • 1-inch piece ginger, grated (optional)
  • 4 cups vegetable broth
  • 1 tbsp olive oil or coconut oil
  • Salt and black pepper to taste

Instructions
 

  • In a large pot, heat olive oil over medium heat and sauté onions until translucent.
  • Add garlic and ginger, cooking for another minute until fragrant.
  • Add chopped carrots and tomatoes, stirring and cooking for 5 minutes.
  • Pour in vegetable broth and bring to a gentle boil. Reduce heat and simmer for 20-25 minutes until carrots are soft.
  • Season with salt, black pepper, and optional spices to taste.
  • Let cool slightly, then blend until smooth. Adjust consistency with more broth if needed.
  • Serve garnished with fresh herbs.

Notes

For added creaminess, stir in coconut milk at the end. This soup can be frozen for up to 3 months.
