Ingredients
  

  • 1.5 lbs fresh zucchini (grated)
  • 1 teaspoon sea salt
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 cup green onions (finely sliced)
  • 2 tablespoons fresh dill or parsley (chopped)
  • 1/4 cup feta cheese (crumbled)
  • 1/2 teaspoon garlic powder
  • 3-4 tablespoons olive oil or avocado oil
  • 1 cup Greek yogurt (plain, full-fat)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest
  • 1 clove fresh garlic (minced)
  • Black pepper to taste

Instructions
 

  • Grate the zucchini and place it in a colander. Sprinkle with salt and let it sit for 15-20 minutes to draw out moisture.
  • Squeeze the zucchini in a clean kitchen towel to remove excess liquid.
  • In a mixing bowl, whisk the eggs and then stir in flour, baking powder, garlic powder, green onions, herbs, and feta. Fold in the squeezed zucchini.
  • In a separate bowl, mix Greek yogurt, lemon juice, lemon zest, minced garlic, and black pepper for the dip.
  • Heat oil in a skillet over medium heat. Scoop batter into the pan and flatten slightly. Cook until golden brown, about 3-4 minutes per side.
  • Serve hot with the yogurt dip on the side.

Notes

Ensure to squeeze the zucchini thoroughly to avoid sogginess. Adjust oil temperature for optimal frying.
